The classic Hummus and Tabouli recipe

The classic Hummus and Tabouli recipe

Hummus and tabouli are the classic middle eastern appetizer. If I’m at a Mediterranean restaurant, this would be my go to for an appetizer. I host a lot of parties with family and friends and I really love to entertain. My favorite gatherings are ones with just appetizers, oh and of course some alcohol. I always make hummus and tabouli as one of my appetizers. I cannot tell you enough about the health benefits that parsley contains. It’s an herb that contains vitamin C which is one of the most highly regarded vitamins out there. Hummus goes with tabouli like peanut butter goes with jelly. The creaminess and smooth texture of the hummus has so much flavor with such an easy and simple recipe. Yes you can buy hummus and tabouli but when you make it, you can customize the flavors to your liking. I call this classic appetizer a power food. Oh and the fresh pita bread is the best part. If you really want to make it an easy appetizer, you can make a pizza hummus and tabouli pie. Take a pita bread, spread hummus, then add tabouli and cut it up like a pie. You have yourself a hummus and tabouli pizza. I promise that your belly will be dancing to these fresh flavors and simple recipes! Enjoy Rana’s Kitchen Recipe of the day 🙂

Fish curry recipe with caramelized onions and white rice

Fish curry recipe with caramelized onions and white rice

This fish curry recipe is full of flavor and very easy to make. I know, easier said then done… But it really is! When my kids come home from school, they know that I’ve made fish curry because you can smell the curry and caramelized onions walking through the door. Or from the end of our street.. HA! I love fish in general but this is a favorite in my family because we all love spicy food. If you do not like your food too spicy, you don’t have to add as much curry as I have. I made this with catfish but white fish and tilapia go too. This dish is traditionally eaten with white boiled rice but then again, I love to eat rice with everything. You can always substitute rice with quinoa or bulgur. The flavors from the gravy really go hand in hand with any starch. The caramelized onions and fresh parsley give it such a kick. When combined with the curry and fresh lemon, the gravy flavors really come together. All I have to say is yummy!!!

A Chicken Wrap recipe passed down for generations

A Chicken Wrap recipe passed down for generations

The chicken wrap with sumac that started it all. So I learned how to make these wraps from my mom who learned from her mom. It’s been in the Chaldean community for, well a long time. Every time I made this wrap my girlfriends literally devoured it. It is so light and good yet so simple to make with just 4 ingredients. My girlfriends and I get together every other week for poker. Usually the host makes everything, well some of us do take out. I always make my wraps amongst other things, but that seems to be the popular dish that always disappears first. I decided to make a fun 60 second tutorial on how to make it. This chicken wrap was my first video and after I posted it, I ended up getting 3,500 views that week. Then I decided to make more cooking tutorials of my recipes and post them. And that my friends is how it all started… That is when ranaskitchen was born. Haha! I love this wrap with the lavash bread because it’s so light. If you cannot find lavash bread at your local middle eastern store, then you can pretty much use any wrap or pita bread. This chicken wrap is great for Super Bowl parties, picnics, road trips, or just because. I always make them when we go on a road trip and they’re always a big hit. My kids love them. If you are rushing home from work and you’re hungry and want something quick to make, just stop and get […]

Welcome to my new website!

Welcome to my new website!

Hey Guys! I created this site because I enjoy cooking. I wanted to share the recipes I've learned over the years with you. Most of my recipes come from my mom, my grandmother (God rest her soul), my aunts and friends. I get inspired everywhere. I love to take a recipe and give it my own flare. I've always enjoyed cooking since I was a little girl. Any time I have my girlfriends over, they would ask for the recipe. After a while, they would say "just send us a video of the recipe because it didn't quite turn out like yours." I came up with the idea to make a 60 second tutorial on "how to." I promise it is as easy as it looks. I enjoy preparing and cooking a variety of meals and dishes but my forte is middle eastern cuisine. So, I hope you enjoy watching my cooking tutorials and I hope they are helpful in your kitchen. Welcome to Rana's kitchen :)
