Fish curry recipe with caramelized onions and white rice

This fish curry recipe is full of flavor and very easy to make. I know, easier said then done… But it really is! When my kids come home from school, they know that I’ve made fish curry because you can smell the curry and caramelized onions walking through the door. Or from the end of our street.. HA! I love fish in general but this is a favorite in my family because we all love spicy food. If you do not like your food too spicy, you don’t have to add as much curry as I have. I made this with catfish but white fish and tilapia go too. This dish is traditionally eaten with white boiled rice but then again, I love to eat rice with everything. You can always substitute rice with quinoa or bulgur. The flavors from the gravy really go hand in hand with any starch. The caramelized onions and fresh parsley give it such a kick. When combined with the curry and fresh lemon, the gravy flavors really come together. All I have to say is yummy!!!
