Chicken Gyro on a Pita

 

Ingredients For Tzatziki Sauce:

  • Cucumbers (2 Persian Cucumbers)
  • Fresh dill (1 Tablespoon)
  • Greek Yogurt (2 Cups)
  • Salt (1/2 Teaspoon)
  • White Pepper (1/2 Teaspoon)
  • Cayenne Pepper (1/4 Teaspoon)
  • Minced Garlic (2 Cloves)
  • Lemon Juice (2 Tablespoons)

Ingredients For Chicken Gyro And Marinade:

  • Greek Yogurt (3 Tablespoons)
  • Minced Garlic (3 Cloves)
  • Lemon Juice (2 Tablespoons)
  • White Wine Vinegar (1 Tablespoon)
  • Olive Oil (1 Tablespoon)
  • Oregano (1 1/2 Tablespoons)
  • Salt (1/2 Teaspoon)
  • Black Pepper (1/2 Teaspoon)
  • Skinless Boneless Chicken thighs (6 Pieces)
  • Pita Bread (6)
  • Condiments for sandwich (Onions, Tomatoes and Cucumbers)

Directions For Tzatziki Sauce:

  1. To make the tzaziki sauce you need two Persian cucumbers. Cut them lengthwise with a knife and with a spoon, scoop out the whole middle/seeds.
  2. Chop the cucumbers into uniform small cubes.
  3. Set them on a paper towel and damp dry.
  4. Add them to a bowl.
  5. Chop about 1 tablespoon of fresh dill and add it to the bowl.
  6. Add two cups of Greek yogurt to the bowl.
  7. Add salt and white pepper, to taste.
  8. Add 1/4 teaspoon of cayenne pepper.
  9. Add two cloves of minced garlic.
  10. Add 2 tablespoons of lemon juice and mix everything together with a spoon or fork.

Directions For Chicken Gyro And Marinade:

  1. In a large ziplock bag, add 3 tablespoons of greek yogurt.
  2. Add three cloves of minced garlic into the ziplock bag.
  3. Add two tablespoons of freshly squeezed lemon juice to the bag.
  4. Add one tablespoon of white wine vinegar to the bag.
  5. Add one tablespoon of olive oil to the bag.
  6. Add one and a half tablespoons of oregano to the bag.
  7. Add salt and pepper, to taste.
  8. Add the chicken thighs to the bag and zip the bag. Combine everything and refrigerate for an hour.
  9. Turn the grill on medium to high heat and spray the surface with pam/oil.
  10. Take the chicken out of the zip lock bag and grill 3-5 minutes each side.
  11. Cut the chicken once it is cooked and set aside.
  12. Chop onions, tomatoes and cucumbers very small.
  13. Take one pita bread and add one tablespoon of the tzaziki sauce to the bread, then add the condiments (onions, tomatoes and cucumbers), then add the chicken. Roll the sandwich.
  14. Do the same to all of the sandwiches.
