Creamy Chicken Pasta

  • Chicken Breast (4 Pieces)
  • Garlic (2 Cloves)
  • Shallots (2)
  • Cherry Tomatoes (1/2 Cup)
  • White Mushrooms (1 Cup)
  • Chicken Broth (1 Cup)
  • Heavy Cream (1/4 Cup)
  • Red Pepper Flakes (1/4 TSP)
  • Salt and Pepper (To Taste)
  • Chopped Parsley (For Garnish)
  • Lemon Juice (1 TBSP)
  • Olive Oil
  • Angel Hair Pasta

  1. Take 4 pieces of chicken breast, cover them with saran wrap and use a meat mallet to pound the chicken into about 1/4 inch in thickness. Or you can buy two pieces and cut them to make 4 pieces of chicken.
  2. Once you’ve pounded them, sprinkle salt and pepper on each side of the chicken.
  3. In a deep non stick skillet, set the heat on high and add one tablespoon of olive oil, then add the 4 pieces of chicken and set the heat on medium. Let them cook for about 4-5 minutes each side.
  4. Then remove the chicken and set it on a plate.
  5. Mince two cloves of garlic and add them to the skillet.
  6. Dice two shallots and add them to the skillet.
  7. Chop cherry tomatoes in half and add them to the skillet.
  8. Trim thin slices of mushrooms and add them to the skillet, about a cup.
  9. Sauté everything for a couple of minutes then add one cup of chicken broth.
  10. Add a 1/4 cup of heavy cream.
  11. Bring the chicken back to the skillet.
  12. Add 1/4 teaspoon of red pepper flakes.
  13. Cook the chicken for another 5 minutes covered.
  14. Garnish the dish with chopped parsley.
  15. Add one tablespoon of lemon juice to the dish.
  16. Serve the chicken dish with cooked angel hair pasta.

Enjoy 🙂
