Fattoush Salad

 

Ingredients For The Salad:

  • Baby Romaine Lettuce (2 Head Romain)
  • Radish (4 Small)
  • Cucumber (1 pound of Persian cucumbers)
  • Cherry Tomato (1 Cup)
  • Green Pepper (1 Green Pepper)
  • Fresh Mint Leaves (1/2 Cup Chopped)
  • Flat leaf Parsley (1 Cup Chopped)
  • Purple Onion (1)
  • Pita Bread (2)
  • Olive Oil (2 Tablespoons)
  • Salt and Pepper (1/4 Teaspoon Each)

Ingredients For Fattoush Dressing:

  • Honey (1 Tablespoon)
  • Sumac (2 Teaspoons)
  • Pomegranate Molasses (2 Tablespoons)
  • Lemon (2 Fresh Lemons Juiced)
  • Olive Oil (1/2 Cup)
  • Garlic (4 Fresh Garlic Cloves, Minced)
  • Salt and Pepper (1/4 Teaspoon Each)

Directions:

  1. Cut romaine lettuce into 3/4 inch stripes and add to a large bowl
  2. Cut Radishes, thinly sliced crosswise. Add to the bowl.
  3. Cut cucumbers, thinly sliced crosswise. Add to the bowl.
  4. Cut Cherry tomatoes in halves. Add to the bowl

5.   Cut up the green pepper into thin slices (Julienne). Add to the bowl.

6.   Chop fresh mint leaves. Add to the bowl.

7.   Chop fresh parsley. Add to the bowl.

8.   Cut purple onion into thin slices (Julienne). Add to the bowl.

9.   Take two pita breads and cut them into triangular pieces with a kitchen scissors. Brush them with olive oil and add salt/pepper. Set them on a sheet  pan and into the oven for 375º for about 7-10 minutes or until golden brown. When you take them out of the oven, let them cool off for about 15 minutes. Add them to the bowl.

Directions For Fattoush Dressing:

  1. In a small bowl, combine all of the ingredients and whisk everything together until well blended. Season with more salt and pepper, to taste if desired.
