Iraqi Salad

 

Ingredients For Salad:

  • Persian Cucumbers (8, Chopped Small)
  • Cherry tomatoes (1/2 Cup)
  • Pitted Kalamata Olives (1/2 Cup, Chopped in halves)
  • Beets (1/2 Cup)
  • Chick pees (1/2 Cup)
  • Feta Cheese (1/2 Cup)
  • Parsley (1/2 Cup, Chopped)

Ingredients For Dressing:

  • Sumac (1 Tablespoon)
  • Red Wine Vinaigrette (2 Tablespoons)
  • Olive Oil (1/2 Cup)
  • Lemon Juice (2 Tablespoons)
  • Salt and Pepper (1/4 Teaspoon Each)

Directions :

  1. Chop up cucumbers in any shape you like, preferably small and add to a large bowl.
  2. Cut cherry tomatoes in halves and add to the bowl.
  3. Add pitted kalamata olives. You can cut in halves or leave as whole.
  4. Add beets from a jar. Or you can make fresh.
  5. Add chickpeas, feta and chopped parsley into the bowl.
  6. In a separate smaller bowl, make the dressing. Just add everything to the bowl and mix together. Then add the dressing to the salad.
