Jack-O-Lantern Stuffed Peppers

 

Ingredients:

  • Orange Bell Peppers (6)
  • Small paring knife
  • Ground Beef (1 Pound)
  • Onion (1/4 Cup)
  • Garlic (1 Clove)
  • Parsley (1/4 Cup)
  • Pine Nuts (1/4 Cup)
  • Salt (1/4 Teaspoon for beef) (1/2 Teaspoon for rice)
  • All Spice (1/4 Teaspoon)
  • Tomato Sauce (1/2 cup for beef and 1 cup for red rice)
  • Rice (1 Cup of Basmati Rice)
  • Vegetable Oil (1 Tablespoon)
  • Water (1 Cup)

Directions:

  1. In a non stick pan, cook one pound of ground beef on high heat. Do not add water, as it gives it out during the cooking process.
  2. When the water dissolves from the ground beef, add one tablespoon of vegetable oil (preference).
  3. Turn the temperature to medium and add a fourth cup of chopped onion to the ground beef.
  4. To that, add a clove of diced garlic to the mix.
  5. Chop a fourth cup of fresh parsley and add it to the mix.
  6. Add a fourth cup of pine nuts.
  7. Add 1/4 teaspoon of salt and allspice (each).
  8. Add 1/2 cup of tomato sauce to the mix and combine everything with a wooden spoon.
  9. Turn off the temperature and set the beef mix to the side.
  10. To cook red rice you need a medium sized saucepan with a good fitting lid.
  11. Set the heat on high and add one tablespoon of vegetable oil to the saucepan.
  12. Add one cup of tomato sauce to that.
  13. Add one cup of water.
  14. Add 1/4 teaspoon of salt.
  15. As soon as the water boils, add one cup of rice and set the heat on medium/low.
  16. Let the rice cook with the lid on for about 10-12 minutes.
  17. When the rice has cooked, add it to the ground beef mix and combine them.
  18. While everything is being cooked, you can work on the bell peppers. To carve the shapes, it is best to work with a small paring knife. You can make triangular shapes for eyes and nose. Be creative and have fun with it. There is no right or wrong with the shapes.
  19. When you have created all of the shapes, add the mix to the bell peppers. Repeat the process to all of them.
