Pasta Salad

 

Ingredients For Pasta Salad:

  • Rotini Pasta (1 Box)
  • Hearts of Palm (8 oz Jar / 1 Cup, Chop)
  • Artichoke Hearts (8 oz Jar / 1 Cup, Chop)
  • Purple Onion (Half of One, Chopped)
  • Cherry tomatoes (Half Cup)
  • Kalamata Olives (1/2 Cup, Pitted)
  • Cauliflower (1 Cup, Chopped)
  • Broccoli (1 Cup, Chopped)

Ingredients For Sauce:

  • Sumac (1 Tablespoon)
  • Red Wine Vinaigrette (1/4 Cup)
  • Olive Oil (1/4 Cup)
  • Honey (1 Tablespoon)

Directions :

  1. Cook rotini pasta for 12 minutes or until al dente. When finished, add a tablespoon of olive oil and set in the refrigerator to cool, or set aside while cutting everything up.
  2. In a large bowl, add hearts of palm, artichoke hearts, purple onion, cherry tomatoes, kalamata olives, cauliflower and broccoli.
  3. Add the pasta to the mix.
  4. Sauce ingredients: just add everything in the bowl and mix really good.
  5. Refrigerate for 30 minutes or until you are ready to eat it.
