Pomegranate Salmon

 

Ingredients:

  • Salmon
  • Honey or brown sugar (1/4 Cup)
  • Pomegranate Juice (1 Cup)
  • Pomegranate Molasses (3 Tablespoons)
  • Whole Grain Mustard (1 Tablespoon)
  • Pomegranate (Fresh for Garnishing)
  • Carrots
  • Salt and Pepper
  • Olive Oil

Directions:

  1. In a small skillet, whisk together honey (or brown sugar), pomegranate juice, pomegranate molasses and whole grain mustard. Simmer on low for 15 minutes.
  2. Cut up the salmon in uniform size. Sprinkle salt and pepper on both sides.
  3. Spray the pan with olive oil or pam spray and add the salmon
  4. Brush the glaze over the salmon and put in the oven 350º for 20-30 minutes.
  5. Shave carrots and clean them.
  6. Sprinkle salt and pepper on the carrots. Roast in oven 425º for 15-20 minutes.
  7. When both the salmon and carrots are cooked, garnish with fresh pomegranate.
