Sweet and Sour Fish

 

Ingredients:

  • White Fish Fillet (3)
  • Onion (1)
  • Red and Yellow Bell Peppers (1 Each)
  • Garlic (2 Cloves)
  • Cherry Tomatoes (1 Cup)
  • Bay Leaves (2)
  • Hot Curry Powder (1.5 TSP)
  • Sugar (2.5 TSP)
  • Cider Vinegar (5TSP)
  • Salt and Black Pepper (1/2 TSP Each)
  • Parsley (1/2 Cup For Garnish)
  • Olive Oil (2 TBSP)

Directions:

  1. In a deep non stick skillet, add two tablespoons of olive oil and set the heat on high.
  2. Roughly slice one onion into half moons and add to the oil. Set the heat on medium and sauté.
  3. Cut one red and one yellow bell pepper into Julienne cut (Long and thin strips) and add to the skillet.
  4. Dice two cloves of garlic and add to the skillet.
  5. Chop one cup of cherry tomatoes and add to the skillet.
  6. Add two bay leaves.
  7. Mix everything and let it sauté for about 3-5 minutes on medium heat.
  8. Add a teaspoon and a half of hot curry powder and combine everything.
  9. Add two and a half teaspoons of fine sugar.
  10. Add five teaspoons of cider vinegar.
  11. Add salt and pepper, 1/2 teaspoon each or to taste.
  12. Add the white fish fillet pieces and cover. Set the whole skillet in the oven 350º for 30 minutes.
  13. When you take it out of the oven, garnish with chopped parsley.
