SWEET AND SPICY SALMON

Ingredients:

  • Salmon (One Slab)
  • Olive Oil (1 Cup)
  • Salt (1 TSP)
  • Black Pepper (1/4 TSP)
  • Italian Seasoning (1 TSP)
  • Cajun Seasoning (1/2 TSP)
  • Dark Brown Sugar (1/2 Cup)
  • Asparagus (1 bunch)
  • Fingerling Potatoes (4-6)
  • Red Onion (1 Large)
  • Fresh Garlic Cloves (6-8)

Directions:

  1. In a round deep medium sized bowl, pour one cup of olive oil.
  2. Add one teaspoon of salt.
  3. Add 1/4 black pepper.
  4. Add one teaspoon of Italian seasoning.
  5. Add 1/2 teaspoon of cajun seasoning (preferably by Slap Ya Mama).
  6. Add 1/2 cup of dark brown sugar.
  7. Mix everything with a whisk and set aside.
  8. In a large sheet pan, add asparagus, fingerling potatoes, chopped onion and fresh garlic cloves.
  9. Pour half of the mixture over the vegetables.
  10. Add the salmon on the bed of the vegetables and pour the other half of the mixture over the salmon.
  11. Bake at 450º for 20 minutes. You can broil for the last couple of minutes if you like it crispy.
