Traditional Lentil Soup

 

Ingredients:

  • Vegetable Oil (One TBSP)
  • Rice Noodles (1/4 Cup)
  • Onions (1/4 Cup)
  • Fresh Garlic (2 Cloves)
  • Salt (1/4 TSP)
  • Ground Cumin (1/4 TSP)
  • Spicy Curry Powder (1/2 TSP)
  • Turmeric (1/4 TSP)
  • Water or Vegetable Stock (10 Cups)
  • Red Lentils (2 Cups)
  • Fresh Lemon Juice (2 TBSP)
  • Parsley (For Garnish)

Directions:

  1. In a large (10 quart) sauce dish, add 2 tablespoons of olive oil and set heat on high.
  2. Add 1/4 cup of shredded rice noodles and stir with a wooden spoon on medium heat. 
  3. Before noodles turn color, add salt, cumin, curry powder, turmeric and stir until noodles brown.
  4. As soon as you see some color to the noodles, add the water or vegetable stock, 10 cups.
  5. When water boils, add 2 cups of red lentils and set heat to medium/low. Let them cook for about 35 minutes.
  6. When lentil soup is done cooking, add lemon juice and turn heat off.
  7. Garnish with parsley.
