I know what it’s like to want to impress guests with my cooking. In fact, one of the greatest pleasures I get from cooking is seeing how people react to my food. From the exclamations of “This is so good!” to the way my guests serve themselves seconds, I enjoy the food being enjoyed just as much as I enjoy preparing it.

This is why I am always looking for new ways to prepare food. Maybe it’s why you’re here looking for new recipes, as well. Whether you’re cooking for youreslf or for guests, you want to make a scrumptious meal, right? I am often looking for ways to prepare tasty and unique dishes, especially with healthy ingredients. The thing is that it’s not always that easy to come up with recipes. I was talking about this with a friend the other day.

I wanted to prepare this type of fish for a meal with my girlfriends but I was at a loss on how to come up with a unique recipe that they have never had before. I have prepared it many times over the years but I didn’t want to keep cooking it the same way that I always do.

This is when one of my friends told me this type of salmon dish with a sweet flavor that had just the right amount of spice to it. I know. At first, I thought she was a little crazy until I actually tried the recipe and it turned out amazing. The thing about this dish is that the marriage of flavors doesn’t seem like a winner at first but once you put the first bite in your mouth, everything makes sense. I love it when friends and family share recipes. Nothing like learning a new delicious recipe.

Salmon doesn’t have to be boring. Whether you have pescatarian guests coming over, you love fish, or you want to prepare a healthy meal, this may be the perfect recipe for you. Pomegranate being a fall fruit, it’s the ideal option to add a bit of exotic flavor to a fish that is as delicious as it is good for you.

How Do You Prepare It?

Ingredients:

  • Salmon
  • Honey or brown sugar (1/4 Cup)
  • Pomegranate Juice (1 Cup)
  • Pomegranate Molasses (3 Tablespoons)
  • Whole Grain Mustard (1 Tablespoon)
  • Pomegranate (Fresh for Garnishing)
  • Carrots
  • Salt and Pepper
  • Olive Oil

The full directions and video tutorial are below, but here’s the gist of it.. You’re going to want to use the above ingredients, minus the fish, to make a glaze. Obviously, you’re going to have that sweet flavor from the juice and honey but the whole grain mustard helps to add a unique taste to it and add some spice to the mix.

Whisk everything together until you get the mustard and molasses blended in nicely with the honey and juice. You can always add salt if you feel that it needs a more savory taste but I personally like it as is. Pour the mix into your saucepan and let it simmer. Keep an eye on it as it simmers so that it doesn’t stick to the saucepan. After a few minutes, let the glaze cool.

You can prepare the fish however you like, whether in the oven or on the frying pan. Make sure to use olive oil over any other type of oil, as it pairs nicely with the flavors from the glaze. You want to make sure that you don’t serve dry fish, as this glaze tastes amazing with a perfectly cooked fish that melts in your mouth.

Do you know what I’m talking about? We’ve all had perfectly cooked fish in our lives and that is exactly what I was going for when I prepared this dish. Once the fish is ready, pour the other mixed ingredients over it and voila, you have a delicious meal that is ready to make mouths water.

I like to top the dish with pomegranate seeds to give it a nice appearance and I serve it with a fresh salad or cooked vegetables on the side, depending on my mood and the occasion.

Why I Love Cooking with Friends

The last time that I prepared this dish, you should have seen the faces of my guests. Many commented how they didn’t really love this type of fish until they tried this recipe. Many of my friends who came over asked me for my recipe and I gladly shared it with them, letting them know that it actually came from another friend.

Although my friend had given me the original recipe which included brown sugar, I substituted it with honey, as I didn’t have brown sugar in my house at the time. I actually like how it added texture to my glaze and felt that the flavor of honey paired nicely with the mustard. But I still love making it with dark brown sugar.

I often find that when friends and family share recipes with me, I like to add a personal touch to the dish, just to make it more unique to my style of cooking. I’m sure my friends do the same with the recipes that I share with them. Ingredients:

  • Salmon
  • Honey or brown sugar (1/4 Cup)
  • Pomegranate Juice (1 Cup)
  • Pomegranate Molasses (3 Tablespoons)
  • Whole Grain Mustard (1 Tablespoon)
  • Pomegranate (Fresh for Garnishing)
  • Carrots
  • Salt and Pepper
  • Olive Oil

That may not sound like a lot of ingredients, but believe me, they are enough to make this meal one of the most amazing recipes around.

Directions:

  1. In a small skillet, whisk together honey (or brown sugar), pomegranate juice, pomegranate molasses and whole grain mustard. Simmer on low for 15 minutes.
  2. Cut up the salmon in uniform size. Sprinkle salt and pepper on both sides.
  3. Spray the pan with olive oil or pam spray and add the salmon
  4. Brush the glaze over the salmon and put in the oven 350º for 20-30 minutes.
  5. Shave carrots and clean them.
  6. Sprinkle salt and pepper on the carrots. Roast in oven 425º for 15-20 minutes.
  7. When both the salmon and carrots are cooked, garnish with fresh pomegranate.
